Steak Sandwich

With summer just around the corner it’s not long before the BBQs get a whole lot more work!

This is a cracking BBQ recipe, my ultimate Steak Sandwich, inspired by Jamie Oliver.

2-4 sandwiches

Ingredients
500g Beef Steak – I normally use rump
Fresh Thyme
Olive Oil
Salt and Pepper for seasoning
100g Semi Dried Tomatoes
Fresh Flat Leaf Parsley
2 Tbsp Low Fat Mayonnaise
1 Tsp Horseradish Cream
Small Bag of Rocket
1 Rustic Loaf of Bread – I like to use a baguette or ciabatta loaf

Method

Turn your BBQ on to heat up

- Sprinkle olive oil over your steak, add some sprigs of thyme then season with salt and pepper, do this on both sides and pat down to make sure it all sticks to the streak

- Add your steak to the BBQ and cook to your liking – I like mine around medium which is about 2-3min each side depending on the thickness of your steak

- Whilst the steak is cooking open up your loaf of bread to make one big sandwich and place at the other end of the BBQ to grill the inside of it – alternatively you can place the loaf in the oven to warm through

- Place your semi dried tomatoes, a good handful of fresh flat leaf parsley, splash of olive oil and salt and pepper on a board and chop everything into each other to make a bit of a salsa.

- Once you steak is cooked, allow it to rest for about 5min

- Grab your loaf and spread the mayonnaise and horseradish cream on the top and bottom of the inside of the loaf

- Thinly slice your steak and add to the sandwich

- If you like, you can mix the resting juices from the steak into the tomatoes then add them to the sandwich on top of the steak

- Add your rocket and fold the sandwich over

With some salad or chips on the side this should feed 3-4 people or two hungry Lions players!
