Unfortunately I haven't had a lot of time to go out fishing or camping in recent weeks, so I decided to keep this week's instalment pretty simple and do something in the backyard.

We had the in-laws up last weekend, so I thought I'd treat them to a delicious spit roast (one of my specialties).

I went to the local butcher, purchased a piece of pork (a couple of kilos worth), scored the rind (to get some delicious crackle), oiled it up and then covered it in salt - because that's what the pros do.

I then chucked the pork on the spit and let it do the magic!

It took around three and a half hours to cook, but it was delicious... Even the in-laws agreed. Watch my video above to see how it all turned out.
